I have never posted a recipe up on my blog but figure I should because I made something so delicious this weekend!! It’s called a tomato toss and it is absolutely delicious, of course everything is to taste, depending on what you like so play around with it.
Cherry Tomatoes (I ended up using an entire package) ~ You want to cut them into quarters so they’re bite sized.
Whole Kernel Corn ~ I used about a half a cup
Green Olives ~ I cut them up into little pieces
Red Onion ~ Quarter of a cup
Black Beans ~ Half Cup
Fresh Cilantro ~ This is totally to taste, I probably used two tablespoons or so…make sure you chop it up very thin.
Sea Salt ~ Teaspoon, not too much more than that because the chips typically have salt.
Olive Oil ~ Teaspoon
Balsamic Vinegar ~ Tablespoon
Juice of a medium lemon
Combine it all into a bowl and let it sit for about an hour or so. It is soooo good. I didn’t take a picture of it, but I will tonight when I make it and stick it up here.
You know it’s funny, when I finally figured out what I want to do with my life, it seems like I figured everything out. I want to be a writer, I am doing everything in my power to make that happen. My goal is to write for a paper. But, not just any paper, I want to work for the Montreal Gazette. Why you may ask? Well, since I have figured out what I want to do, I have this…obsession with Montreal. I have met some amazing people from there…seriously, I have never met an awful person from Montreal. I am sure they are there, but, they’re not in my little circle. I have been trying to plan a trip up there, it hasn’t worked out, yet. I am hoping to go in February or March of 2009.
Anyway, I am losing my mind going to school, and just trying to get there. I know eventually I will be done with school, and could possibly get a job there, but it’s hard getting excited about it, because it seems so far away.
I don’t know if this post made any sense to anyone…but whatever.

Kelsie got baptized on Sunday, it was a beautiful ceremony, even though I wasn’t really sure what was going on. It was my first time at a Catholic baptism, and only my second time in a Catholic church. All in all it was a great and I was glad that I had the opportunity to be there. Here’s a recent picture of my little cutie!!

Mothers Day is a really special day!! I’m pretty lucky because I have a lot of ‘moms’ that have done so much for me!!
Thank mom for all you do for me, thanks for always being there and supporting me. I know there is no way I would be able to do school without you pushing me to do better. You have set a great example for me, and I’m thankful that I have you in my life. You’re honestly my best friend, and I am so lucky to have you as a mom.
Aunt Debbie, if you read this (which you probably will because I”m going to tell you to go on my blog when I come over for dinner lol) thank you for always encouraging me!! You were always there to support me when things were rough with my family and you have always been there for me. Thank you for helping me with my writing, and encouraging me to pursue my dream. I appreciate all you do for my family. I hope I can be half the Aunt you are to my little niece.
I have other ‘moms’ in my life too, but these two deserve the biggest shou tout because they have to put up with me, day in and day out.
